Asparagus Brie Puff Pastry Pockets

Ingredients:

1 Bunch asparagus

1 Small wheel brie cheese

1 Box puff pastry

1/4 Vegan Zero-Waste Basil Pesto


Method:

Preheat the oven to 400 degrees. Lay a piece of composable parchment paper on a baking sheet or grease the sheet with olive oil.


Trim and wash the asparagus. Bring a medium pot of water to a boil. Add the asparagus and boil for 30 seconds - 1 minute. Remove the asparagus from the boiled water and add it to chilled water.


Lay out the puff pastry and cut it into four pieces. Slices the brie into long pieces. Add 2 pieces of brie to the diagonal center of each puff pastry. Next, add 1-2 tbsp. of the vegan zero-waste basil pesto. Add 1/4 of the cooked asparagus and close the puff pastry. Complete this process four times. Bake for 20 minutes and enjoy toasted to perfection.
