Baked Zucchini Fries

2 c. Panko (or bread crumbs)

1 tsp. Salt

1 tsp. Pepper

3 Eggs (or olive oil)

3 Small zucchini

Preheat the oven to 425 degrees. Slice the zucchini into spears. Crack the eggs into a bowl and whisk together. Combine the panko, salt, and pepper in another bowl. Dip each zucchini spear into the egg mixture. Then dip each spear into the panko mixture. Lay each spear on a baking sheet. Continue this process until all of the zucchini spears have been prepared. Bake for 30 minutes. Enjoy with ketchup, chipotle mayo, or pesto mayo.
