“Beef” Stuffed Zucchini Boats

Ingredients:

1 12 ounce package of Lightlife smart ground plant-based crumbles

1 Tbsp. Olive oil

1 1/2 c. Tomato basil sauce

3 Zucchini sliced horizontally with seeds removed. Use a spoon to scoop out the inside of the zucchini.

1/2 c. Shredded mozzarella (or Violife vegan mozzarella)

2 Tbsp. Fresh basil (chopped)


Preheat the oven to 400 degrees. In a sauté pan, heat the olive oil. Add the Lightlife “beef” and cook for 10 minutes or until the beef is cooked through and crispy. Add the tomato sauce and stir together. Use a spoon to transfer the mixture to the zucchini boats. Fill each boat and place in a large baking dish. Once they are all in the dish, cover it with foil. Bake at 400 degrees for 30 minutes. Remove the zucchini boats from the oven and recycle the foil. Place the cheese on top of the zucchini boats. Bake for another 10 minutes. Let cool for 5 minutes.
