Cauliflower Cashew Dip

2 c. Cauliflower florets

1 Garlic clove (chopped)

1 tbsp. Olive oil

1 c. Unsalted raw cashews

Boiled water to soak the cashews

1/2 c. Nutritional yeast

1 tsp. Salt

1 tsp. Garlic powder

1/2 tsp. Black pepper

1 tbsp. Lemon juice

1/4 c. Water

1/2 c. Olive oil


Preheat the oven to 400 degrees. Lay the cauliflower on a baking sheet and add the garlic and olive oil. Mix together and bake for 35 minutes.

Soak the cashews in boiled water for 5-30 minutes. Transfer the cashews to a food processor. Add the nutritional yeast, salt, garlic powder, black pepper, and lemon juice. Blend for 1 minute. Next, add the cooked and cooled cauliflower, water, and olive oil. Blend for 1 minute. Option to add extra chopped cashews as a garnish. Enjoy with warm pita, baguette, tortilla chips, fresh cut veggies and much more.
