Chickpea Peanut Butter Brownies

Ingredients:
1 can Chickpeas (drained and rinsed)
1/2 c. Peanut butter
1/2 c. Maple syrup
2 tsp. Vanilla extract
1 1/2 c. Almond flour
1/2 c. Cocoa powder
1/4 c. Plant milk (Soy, Almond, Oat, Coconut)
1/2 tsp. Salt
1/4 tsp. Baking powder
1/4 tsp. Baking soda
1 c. Mini chocolate chips
1 tbsp. Mini chocolate chips
Method:
Preheat the oven to 375. In a food processor combine the chickpeas, peanut butter, maple syrup, and vanilla extract. Blend for 1-2 minutes. Transfer the mixture to a mixing bowl. Add the almond flour, cocoa powder, plant milk, salt, baking powder, and baking soda. Stir the mixture together for 1-2 minutes. Stir in 1 c. of mini chocolate chips. Transfer the mixture to a greased 8x8 baking pan. Top the brownies off with 1 tbsp. of mini chocolate chips. Bake for 30-40 minutes and enjoy warm.
