Chocolate Chip Sweet Potato Bread

Total Time: 1 Hour and 15 Minutes


Wet Ingredients:

1 Stick of melted butter (you can also use vegan butter)

2 tsp. Vanilla

1 can Sweet potato purée

2 eggs (you can also use egg replacer)


Dry Ingredients:

1/2 c. Brown sugar

2 c. Flour

2 tsp. Pumpkin pie spice

1 tsp. Baking soda

1/2 tsp. Salt

1 c. Chocolate chips (vegan)


Topping Ingredients:

1 tbsp. Chocolate chips

1 tbsp. Pumpkin seeds


Method:

Preheat the oven to 350 degrees. Grease a bread pan with butter or oil. In a medium sized bowl stir together all of the wet ingredients. In a different medium sized bowl combine these dry ingredients: brown sugar, flour, pumpkin pie spice, baking soda, and salt. Add the wet ingredients to the dry and stir together for 3 minutes. Finally, mix in the chocolate chips. Pour the mixture into the greased bread pan. Add the chocolate chip and pumpkin seed toppings and bake for 1 hour. Enjoy warm!
