Chocolate, Peanut Butter, Pumpkin Seed Bites


1 c. Almond flour

3/4 c. Oats

1/2 c. Peanut butter

1 Tbsp. Coconut oil (melted)

1 tsp. Vanilla

4 Tbsp. Maple syrup

1/4 tsp. Salt

1 c. Chocolate chips (1/2 c. For melting)

2 Tbsp. Raw pumpkin seeds (pepitas)

In a food processor, combine the almond flour, oats, peanut butter, coconut oil, vanilla, maple syrup, and salt. Pulse together for 2 minutes. Add 1/2 c. of chocolate chips. Pulse for 1 minute. Form the dough into balls. Place them in the refrigerator for 15 minutes.

Melt 1/2 c. chocolate chips in a microwave. Dip each ball in the chocolate and place on a plate with parchment paper. Add pumpkin seeds to the top of each ball as the chocolate is hardening. Place the balls in the refrigerator for 20 minutes.

Yields 10-12 bites
