General Tso Green Beans and Cauliflower

General Tso Sauce


4 cloves of garlic (minced)

1 1/2 Tbsp. Ginger (minced)

2 tbsp. Rice wine vinegar

4 tbsp. Tamari (or soy sauce, coconut aminos)

1 tbsp. Water

1/4 c. Maple syrup (or agave)

1 tbsp. Sesame oil

1/2 tsp. Sriracha

1/4 tsp. Red pepper flakes

1 tbsp. Arrowroot powder

Mix all of the ingredients together to make the sauce.

Green Beans and Cauliflower Ingredients:

1 head of cauliflower (chopped into florets)

1 (10 ounce) package of green beans

2 tbsp. sunflower oil (or canola oil)

3 c. cooked quinoa

Preheat the oven to 400. Lay the cauliflower on a baking sheet. Coat the cauliflower in 1 tbsp. of sunflower oil. Bake for 30 minutes.

In a frying pan heat up 1 tbsp of sunflower oil. Add the green beans and sauté for 8 minutes. Once the cauliflower is done add it to the green beans. Add the general tso sauce and stir for 5 minutes over the stove. Serve over cooked quinoa.

Serving Size: 2-4 (without quinoa) 4-6 (with quinoa)
