Healthy Bites

2 c. Rolled oats

2 c. Coconut flakes

1/4 c. Chia seeds

1/2 c. Chocolate chips

1/2 tsp. Salt

1/2 tsp. Vanilla

1/2 c. Honey (or agave)

1/2 c. Peanut butter


1 c. Vegan chocolate chips (melted)

1/3 c. Sunflower seeds (or raw pumpkin seeds)

Mix all of the ingredients: the rolled oats, coconut flakes, chia seeds, chocolate chips, salt, vanilla, honey and peanut butter in a food processor. Use your hands to shape the bites into balls. Lay them on a baking sheet with (compostable) parchment paper. For a decorative bite, melt 1 cup of semi-sweet chocolate chips and roll each bite in the chocolate. Sprinkle with sunflower seeds. Place in the refrigerator for 1-2 hours while the chocolate hardens.
