Healthy Bites (Vegan)

Ingredients:

2 c. Gluten free rolled oats (organic)

2 c. Unsweetened coconut flakes

1/4 c. Chia seeds

1/2 c. Chocolate chips

1/2 tsp. Salt

1/2 tsp. Vanilla

1/2 c. Agave

1/2 c. Peanut butter

1 c. Chocolate chips (microwave in 30 second increments - stir in between until melted)

1/3 c. Sunflower seeds (or raw pumpkin seeds)


Method:

Combine the following ingredients in a food processor: rolled oats, coconut flakes, chia seeds, chocolate chips, salt, vanilla, agave and peanut butter in a food processor. Mix for 1 minute and pulse for 1 minute.


Option to scoop the mixture into a bowl or keep it in the food processor. Use your hands to shape the bites into balls. Lay the balls onto a baking sheet lined with compostable parchment paper. Melt the chocolate chips and roll each bite in the chocolate. Lay the bite onto the pan and sprinkle with sunflower seeds. Place the bites into the refrigerator for 1-2 hours while the chocolate hardens. Store in the fridge and enjoy for up to 1 week.
