Kosher for Passover Chocolate Covered Matzah

3 Sticks of unsalted butter

1 ½ c. Light brown sugar

1 Box of plain matzah

1 12-ounce Bag of white chocolate chips

1 24-ounce Bag of semi-sweet chocolate chips

Toppings: nuts, dried cranberries, heath bar, peanut butter, white chocolate chips, coconut flakes, mini chocolate chips, chia seeds.

Preheat the oven to 350 degrees. Heat a sauté pan to low-medium heat. Melt the butter and light brown sugar. Stir the mixture for 5-10 minutes as it thickens. Keep it at a low temperature. If the heat is too high, the mixture will burn. Line 3 baking sheets with parchment paper. Place the matzah in a single layer on each of the parchment paper-lined baking sheets. If need be, the matzah can be broken into pieces so they fit on the baking sheets. Pour the brown sugar and butter mixture onto the matzah. Use a spatula to spread the mixture. Bake the matzah in the pre-heated over for 10 minutes. Add the chocolate chips to the top of the matzah and place the matzah back in the oven for 30 seconds. Use the spatula to spread the melted chocolate. Add the toppings and place the matzah in the refrigerator for 2 hours.
