Zucchini Noodles with Everything Cheeze Zero-Waste Basil Pesto


Total Time: 20-30 Minutes


Ingredients:

1 c. Everything Cheeze Zero-Waste Basil Pesto

2 Medium Zucchini (or premade zucchini noodles from the grocery store)

1 can Chickpeas (drained & rinsed)

1/4 c. Microgreens


Method:

1) Make the Everything Cheeze Zero-Waste Basil Pesto.

2) Either make your own zucchini noodles with a zoodler (a zucchini noodle machine) and two zucchini or buy premade zucchini noodles from the grocery store. Add the zucchini noodles to a medium size bowl.


3) Drain and rinse one can of chickpeas. Add the chickpeas to the zucchini noodles in a medium size bowl.


4) Stir 1 c. of Everything Cheeze Zero-Waste Basil Pesto into the medium size bowl with the raw zucchini noodles and chickpeas. Use tongs (or salad spoons) to turn the zoodles until they are evenly coated with the pesto.


5) Top the dish with 1/4 c. of microgreens.
