Spicy Cucumber, Avocado, Red Pepper Sushi Rolls


1 Cucumber (deseeded and sliced into thin horizontal spears)

2 Avocados (sliced into horizontal spears)

1 Red bell pepper (sliced into thin horizontal spears)

4-6 Pieces of sushi nori

3-4 c. Cooked sushi rice

4 tbsp. Liquid aminos (or tamari, soy sauce)

1-2 tbsp. Hot wasabi sauce (optional)

1-2 tbsp. Mike’s hot honey infused with chilies (optional)

1 tbsp. Sesame seeds (optional)

1 Bamboo sushi roller

Lay the sushi nori on your bamboo sushi roller. Add 1/3 - 1/2 c. sushi rice with a spoon to the sushi nori. Use the spoon to flatten the rice on the sushi nori. Add a few slices of cucumber, avocado, and red bell pepper. Continue this process until all of the rolls are made.

If you are using the hot wasabi and hot honey you can either put it inside the rolls or on top of the rolls after you are done rolling them all. Add the sesame seeds to the top of the sushi and enjoy with liquid aminos, tamari, or soy sauce.

Serving Size: 4-6 rolls
