Trader Joe's Sweet Potato Gnocchi with Asparagus, Sage and Pistachios


1 Package sweet potato gnocchi (Trader Joe's)

2 tbsp. Vegan butter

½ c. Asparagus (chopped)

2 Tbsp. Fresh sage (chopped)

2 Tbsp. Pistachios (chopped)

½ tsp. Salt

½ tsp. Pepper

In a frying pan, melt 1 tbsp. vegan butter and add the gnocchi. Sauté until golden brown for approximately 10 minutes.

In a separate frying pan, melt the remaining 1 tbsp. butter and add the asparagus, sage, and pistachios. Sauté for 5 minutes. Add the salt and pepper, and remove from the stove.

Combine the gnocchi and the sauce and serve.
