Vegan Cayenne Corn

Ingredients:

1/4 c. Vegan mayonnaise (or regular mayonnaise)

1 Tbsp. Sriracha

2 tsp. Cayenne pepper

1 tsp. Red pepper flakes

4 Ears of corn

1 Tbsp. Vegan butter (or regular butter)


Shuck the corn. Bring a large pot of water to a boil. Boil the corn for 5 to 7 minutes. Strain all of the water out of the pot. Place 1 Tbsp. of butter in the pot. Add the corn and let the vegan butter melt onto it. Move the corn to a serving dish.


Sriracha Mayonnaise:

Combine the vegan mayonnaise, sriracha, 1 tsp. of cayenne pepper, and red pepper flakes in a small bowl. Stir the mixture together well.


Coat 1 tbsp. of the sriracha mayonnaise onto each ear of corn. Sprinkle an additional 1 tsp. of cayenne pepper on top of the dish and serve.
