Vegan Quesadilla Tacos

The different components of this meal are meant to be made simultaneously cutting down on the total time it takes to cook it.


Ingredients

Vegan Taco Meat:

Light Life Smart Ground Plant-Based Crumbles

2 tbsp. Sunflower oil (option to use canola)

1 tbsp. Taco seasoning

1/2 tsp. Salt

1/4 tsp. Black pepper


Zucchini and Black Beans:

1 Yellow onion

2 Garlic cloves (chopped)

2 tbsp. Sunflower oil (option to use canola)

1 Medium zucchini

1 can. Black Beans

1 tbsp. Taco seasoning

1/2 tsp. Salt

1/2 tsp. Black pepper

1/4 tsp. Garlic powder


Quesadilla Taco Tortilla:

16 small tortillas (to make this gluten free purchase corn tortillas)

1/2 package Miyoko's Vegan Farmhouse Cheddar Cheese


Vegan Taco Meat:

In a medium sauté pan heat 2 tbsp. of sunflower oil. Add the Light Life Smart Ground Plant-Based Crumbles and cook for 7 minutes. Stir the mixture frequently. Once the vegan meat is crispy add 1 tbsp. taco seasoning, 1/2 tsp. salt and 1/4 tsp. black pepper.


Zucchini and Black Beans:

Cut the onion into long thin slices. Roughly chop the garlic cloves. Turn the stove on and add 1 tbsp. of sunflower oil to a large sauté pan. Transfer the onions and garlic to the pan and cook for 3 minutes.


Chop the zucchini into 1 inch pieces. Add 1 tbsp. of sunflower oil to the pan. Transfer the zucchini to the pan and cook for 7 minutes.


Rinse the can of black beans. Next, add the black beans to the pan. Add 1 tbsp. taco seasoning, 1/2 tsp. salt, 1/2 tsp. black pepper and 1/4 tsp. garlic powder. Cook for 3 minutes. Remove the Zucchini and Black Bean mixture from the stove.


Quesadilla Taco Tortilla:

In a small sauté pan heat 1 tortilla. Add 2 tbsp. of vegan cheese and then top with another tortilla. Cook for 2 minutes and then flip the quesadilla. Cook for another 2 minutes and then set the quesadilla aside. Continue this process until 8 quesadillas are cooked.


Top the quesadillas with the vegan taco meat and the zucchini and black bean mixture. Option to add sliced avocado to your taco. Enjoy with friends or throughout the week. Store in the fridge for 5-7 days.
